the big O-N-E...

Where has the time gone?? It really doesn't feel like it has been a year since our little girl joined our family!! So much has happened during that time, and yet it feels like we just brought her home from the hospital!! All I can say is that our sweet Carrie Anne has been such a joy, and we absolutely love her to pieces!!

A quick look at Carrie's 1st YEAR!!...

...and here she is as a ONE YEAR OLD!!!
She is just as beautiful as ever, and we had a lot of fun celebrating her birthday!!!
Here she is enjoying her cake with her cousin Elyse watching, who really wanted to try some cake too. Elyse will get to celebrate her first birthday next month!

this is LIFE... as we know it

Since moving we have kept busy with all the changes... Kevin and I have 2 callings in the ward. We are on the Activities committee, and we are in charge of putting together a roadshow for the youth. That second one has been a little overwhelming to say the least, and time consuming, and stressful... (I could go on, but I won't, haha), but we are doing the best we can and we hope that in the end it will turn out!!
I have been surprised with how well the kids have done with the move. I don't know what I expected exactly, but it has been a pretty smooth transition. Andrew keeps himself busy with his cars and trains, and his new found love... puzzles!! I love him so much, he makes me laugh all the time. He is now a Sunbeam in primary, and he has been enjoying that as well, but he will not sing during singing time!! We have talked about how he should sing, and each week after primary he tells me, "I didn't sing today... I will try next time." I hope that one of these weeks he really does!!

Carrie is getting so big, and we love her to death. She has been really close to walking for awhile now, but she still prefers to crawl.... and she crawls FAST!! Sometimes Andrew gets down on the floor and crawls around with her, and they both just laugh and laugh. I love seeing them together!! She talks and babbles all day long, and she LOVES music... whenever she hears music she starts to dance. I love it... and I love MY KIDS!!!

"Food" for thought Friday

NAVAJO TACOS:

thawed roll dough
chili (I like homemade... but can use from a can)
cheese, shredded
lettuce, shredded or torn
salsa
sour cream
onion, whatever kind you like
olives, sliced (optional)... or any other toppings you would like

Heat a pan with oil. You are going deep fry the roll dough. Once you get the oil to prime frying temperature, flatten a piece of roll dough and put it into the hot oil. Fry the one side until golden, then flip to cook the other side. Once that side is golden, remove from the oil and place on a plate lined with paper towel. Continue doing this with all your dough. Once complete, top the fried dough with chili, cheese, and other toppings, and enjoy!!!

"Food" for thought Friday

Okay Heidi, this is for you!! Who doesn't need recipe ideas? I think we all get sick of making the same things for dinner all the time, so I am going to try and post a recipe each Friday, and anyone who wants to spread the love can join in!!! The more the merrier!

I am not even sure where I got this recipe, but I love it! I have learned to love using the crock pot because it is so easy, and saves time! SO, here is a quick and yummy dinner to throw into the crock pot and forget about until dinner. You could also make this over the stove though if you prefer... and I prefer this served over rice!!

EASY CROCK POT CHICKEN:
4 chicken breasts, frozen or thawed
1 can cream of chicken soup (or mushroom)
1 envelope dry Italian dressing mix
grated carrots, opt.
sliced potatoes on bottom of crock pot (optional)

Spray crock pot with Pam. Mix dressing with soup, pour over chicken and place in crock pot for 4 hours if not frozen, 6-7 if frozen. Chicken should shred easily when done cooking. Serve over rice or egg noodles.

So far, So good....

My brain has felt a little overwhelmed with all that has happened, and yet there doesn't seem to be anything that interesting to post!! BUT for the record, if you don't read anything else... just know that we are doing great!!! We finally moved from Logan on December 20th, and what an adventure it was!! Things actually went pretty smoothly, and we had lots of helping hands, (thank you everyone that helped!!) but the snow was incredible!! What a crazy time of year to move. It has taken some time, but I think that we are finally settled in here.

We had a great Christmas, and Santa was good to us!! I have always loved Christmas, but I think it is even funner when you have kids to share it with! It is so fun to see the excitement in their eyes, and it makes me feel like a kid again. LOVE IT!!!

The snow we have gotten the last couple of weeks has been incredible. How fun to have a white Christmas!! Andrew has loved being able to go outside to play in the snow. One day Kevin and Andrew played outside for a long time and made a big snow wall that turned into a slide.

Kevin starts his new job on Monday. We are really excited for this new adventure, and feel so blessed to have this opportunity. We will miss living in Logan, we loved it there!! We will miss our ward and the friends that we have there, but I know that this is where we should be right now and all I can say is... BRING IT ON!!
